6.0 thigh, bone and skin removed Chicken Thigh1.0 cup (8 fl oz) Chicken Broth3.0 tbsp Butter, unsalted1.0 tbsp Extra Virgin Olive Oil1.0 cup, chopped Onions, raw5.0 clove Garlic0.25 cup slices (1" dia) Ginger Root0.25 cup Tomato Paste0.5 cup, whipped Heavy Whipping Cream100.0 grams Cilantro, raw
Heat the butter and oil in a pan and brown the cubed chicken pieces remove with slotted spoon to slow cooker. Next in the oil butter pan, saute onion, garlic and ginger (I used paste) for 3 minutes. Add the chicken broth and tomato paste let it get bubbly and add the spiced. Stir until well mixed and pour over chicken in slow cooker... cover and simmer on low for 5-6 hours. Last 30 minutes add the cream and stir well. Garnish with fresh cilantro. Serve over rice!
