Sweet and Sour Chicken

Ingredients
130 grams Carrots, raw (3 carrots)190 grams Green Peppers (bell peppers) (1 large pepper) 200 grams Onions, raw (1 small/medium onion)20 grams quick cooking tapioca (2 Tbsp)908 grams chicken thigh, raw (2 lbs) 567 grams crushed pineapple (20 oz)42 grams Brown Sugar (3 Tbsp)76 grams apple cider vinegar (1/3 cup)14 grams reduced sodium soy sauce (1 Tbsp)4 grams chicken bouillon (1 cube)1 gram garlic powder (.25 tsp)2 grams Ginger, ground (.5 tsp)1 gram Salt (.25 tsp)
Directions
Slice carrots; chop green pepper and onion.

Place vegetables in slow cooker.

Sprinkle tapioca over vegetables.

Cut chicken into chunks or slices.

Add chicken to slow cooker.

In separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger, and salt.

Pour pineapple mixture over chicken .

Cover.

Cook on low 8-10 hours.
