Basic Hummus

Ingredients
1 15 oz can chickpeas (garbanzo beans) - drained, rinsed & peeled1/3 cup Tahini (sesame paste)1/4 cup Olive Oil Juice of 1/2 lemon 2 clove Garlic (minced or crushed)1/4 tsp ground cumin 3/4 tsp salt 3 - 4 Tbsp water (or reserved chickpea liquid) Olive Oil (for garnish)Paprika (for garnish)Chopped Parsley (for garnish)
Directions
1. Drain & rinse chickpeas *
2. Place all ingeredients (except for water) in the bowl of a food processor.
3. Process until very smooth, at least 1 minute
4. Add water/liquid 1 TBSP at a time, and process until desired thinness is acheived
5. Check seasonings and add more garlic, salt, cumin as desired
6. Spoon Hummus into a bolw. Drizzle the top with olive oil and sprinkl a few dashes of paprika and a few pinches of parsley on top
7. Keep referigerated

Serving Size: Yields 2 cups equalling 18 - 2 Tbsp servings
