Pineapple Chops

Ingredients
Fresh Finely Chopped Pineapples Sweet OnionsPimento Pieces 6 Pork chops
Directions
Preheat oven on 375.
Chop Pineapples very finely. Mix Pimento Pieces and place to side.
Place all chops in a baking dish.
Place 1 tbsp of pineapple mixture on ech chop. Pour Pineapple juice in backing dish.
Cut Onions and Spread evenly throughout baking dish.
Cover Dish and Bake for 40 minutes or until chops are done.

    This was really good. I used sliced pineapple rings and since I didn't have pimentos , I used roasted red peepers. It was great to have a different recipe for chops for a change. - 4/12/07
