1 can (15 oz.) Ranch-Style Beans1 can (15-ish oz.) black beans, drained and rinsed1 can (10 oz.) Ro-Tel tomatoes1 can (14.5 oz.) fire-roasted, diced tomatoes1 can (15-ish oz.) yellow corn1 can (14.5 oz.) chicken broth1 can (4.5 oz.) diced green chiles 2 tsp. ground cumin1/2 tsp. oregano1 tsp. chili powder 1/2 tsp. garlic powder 1/4 cup finely chopped onion (optional)1/4 cup finely chopped celery (optional)1/4 cup yellow cornmeal (optional) **
Stir all the ingredients together in a big enough pot to hold everything.
If you're using the onions and celery, simmer for about an hour so they'll soften.
Otherwise you can just cook it until it's heated up.
**(If you omit the cornmeal, which is mostly in for thickness and texture) then it's only 118.6 calories per serving.)
Like all soups, it's better the next day.
Serving Size: about 10 ONE (1)-cup servings
