12 large Egg, fresh, whole, raw .75 cup Half and Half Cream 1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 1.5 cup, pieces or slices Mushrooms, fresh 2 cup Spinach, fresh 1.5 cup, shredded Gruyere Cheese 3 tbsp Extra Virgin Olive Oil 1 tbsp Butter, unsalted
Carmelize onion, add thyme. Add mushrooms, sweat. Set aside. Wilt spinach. Set aside. Add cheese to mixture.
Combine egg, cream. Combine egg mixture and veggies. Dispense into greased muffun tins. Bake @375 30ish min
