1 serving Foldit, Flatout artisan flat bread w/ 5 grain flax 1 oz Neufchatel Cheese (2 tablespoons)4 grape tomatoes, sliced in half 4 medium fresh Mushrooms, sliced4 leaf Spinach, fresh 1 tbsp Parmesan Cheese, shredded 1 large Egg, fresh, whole, raw
Preheat oven to 400 degrees F. Line a baking sheet with parchment paper (or aluminum foil, sprayed lightly with cooking spray). Place flatbread on pan, spread with Neufchatel cheese. Place tomatoes, mushrooms and spinach on top, leaving a space for the egg. Crack egg into to the space, Sprinkle egg with salt and pepper and top with shredded cheese. Bake for 10 minutes, or until egg is set and flatbread is brown on edges.
