Bacon/Spinach Crustless Quiche Muffins

0.25 cup Milk, 3.25%8.0 large Egg, fresh, whole, raw1.0 cup Spinach, frozen0.5 cup Kraft Finely Shredded Sharp Cheddar Cheese0.5 cup Kraft Mozzarella Finely shredded Part Skim cheese.7.0 serving Wright Thick Cut Bacon (2 slices)0.5 serving Rotel Tomatoes - Hot
Baked 7 pieces of bacalon
Mix 8 eggs w/ cheddar & mozzarella cheese
Microwave frozen spinach to get water out and add to egg mixture
Add 1/4 of milk/ heavy cream to egg mixture
Once bacon is ready, cut into egg mixture
Add .5 can of hot rotel tomatoes for spice
Season w/ salt & pepper and mix well
Spoon mixture into muffin pan and bake for 30-40 minutes or until done.
