Chicken Karhi

Ingredients
1.5 lbs of chicken pieces with bone, skin removed, rinsed2 tbsp oil for frying2 lg onions, chopped2 c. tomatoes, chopped4 cloves garlic, minced1 tbsp fresh ginger, minced2 Jalapeno peppers, chopped (optional)2 tsp salt1 tsp cayenne pepper2 tsp ground coriander1 tsp turmeric1-2 c. water
Directions
Chop onions and tomatoes. Mince garlic and ginger. Heat oil in a wok or large pan. Lightly brown chicken pieces and remove from pan. Saute onions until golden. Add garlic and ginger and brown. Add spices and tomatoes. Mix well. Cook on low heat, constantly stirring until a thin paste consistancy. Add browned chick back to pan and 1-2 cups of water. Coat the chicken in the sauce. Cover and cook on medium heat for about 20 minutes or until chicken is tender. Spinkly the top chopped janapeno peppers, shredded fresh ginger and fresh cilantro.

Serve with Indian chapati or Basmati rice.
