Smoked sausage and Veggie bake

Ingredients
3lb Smoked Sausage, pork and beef 1 med yellow squash and 1 zucchini 3 large sweet potatoes1 each yellow and red bell peppers12 oz Baby Carrots, Raw 3 garlic cloves minced1/2 cup Extra Virgin Olive Oil 1 tbsp dried rosemary1tbsp dried oregano1 tbsp dried basil1 tbsp parsley1 tsp red pepper flakes1 tsp salt1 tsp sage
Directions
Preheat oven to 400. Line 2 large cookie sheets with aluminum foil and spray with cooking spray. Chop veggies in bite size chunks and add to large mixing bowl. Leave baby carrots whole if desired. In small bowl mix olive oil, minced garlic and seasonings. Pour oil mixture over veggies and stir to ensure all veggies are coated. Chop sausage into 1/2 inch pieces, evenly divide between 2 pans. Add veggie mixture by evenly dividing between 2 pans. Mix together veggies and sausage on pan and ensure food is in single layer on pans. Bake in oven fo 30-35 minutes until veggies are desired tenderness.
