Roasted potatoes and carrots

Ingredients
1 medium potato- cut into chunks1/2 onion- cut into chunkssome baby carrots1 tsp olive oilsalt
Directions
Makes 1-2 servings (calories for one serving)
Preheat oven to 350 degrees
After cutting the potato (leaving skin on) and onions, mix together with carrots and olive oil. Place on a cookie sheet thats been sprayed with cooking spray. Sprinkle with salt to taste (or you can get creative with different spices).
Cook for about 20 minutes, then turn over, and cook additional 20 minutes. (times vary....it's really what you want)
