0.25 tsp Paprika0.25 tsp Pepper, black0.5 tsp Salt1.33 tbsp Cider Vinegar8.0 tbsp Kraft Mayo Light Mayonnaise (Mayo)2.0 medium (4-1/8" long) Scallions, raw0.5 tbsp Extra Virgin Olive Oil632.0 grams Red Potato14.0 gram(s) Cheese, Frigo Shredded Parmesan Cheese (1/4 cup)5.0 tsp Dijon Mustard (Great Value)3.0 oz Onion, sweet, raw
Directions
Boil approximately 7 small to medium red potatoes and lightly salted water until tender. Meanwhile in a small bowl combine light mayonnaise parmesan cheese Dijon mustard cider vinegar salt pepper and paprika. While the potatoes are boiling I lightly saute my onions and a little bit of extra virgin olive oil until lightly translucent then I add them to the dressing with the scallions. When potatoes are done and cool enough to handle dice them into quarters and toss them with the dressing. Serving Size: 4
