Blackeyed Peas and Ham

Ingredients
3.5 cup Blackeyed Peas canned 15 oz (Safeway) (by MRS.SIX) .5 cup, diced Celery, raw .5 cup, chopped Carrots, raw 1 tbsp Extra Virgin Olive Oil 1.5 cup, diced Ham, extra lean, (5% fat) .5 cup, chopped Onions, raw
Directions
Heat olive oil over medium heat in pot. Add celery (finely diced), carrots (finely chopped), onion and ham, stir and cook until vegetable are medium soft. Do not drain blackened peas, add to pot. Heat and serve.
Add hot sauce or cayenne pepper to taste.
