Natalie's Cherry Chocolate Scones

Ingredients
0.5 cup Butter, salted1.0 dash Salt1.0 cup pitted chopped fresh cherries2.0 tsp Baking Powder0.25 cup Granulated Sugar1.0 cup Silk - Vanilla Soy0.5 cup chopped dark chocolate3.75 cup Flour - all purpose flour
Directions
Sift together flour, baking powder, salt, and sugar. Using a pastry cutter cut in butter until butter pieces are pea sized. Gently fold in pitted chopped cherries and chopped chocolate. Make a well in the middle and add soy milk. Combine until dough forms avoiding over mixing. Stick in freezer for 30 minutes to chill dough. Pre-heat oven to 400F. Separate chilled dough into two balls. On a lightly floured surface shape each ball into a round disk 1 to 1.5 " thick. Using a pizza cutter slice each disc into 6 wedges (12 wedges in total) . Place wedges on a parchment lined baking sheet and bake for 20 to 25 minutes until lightly browned. Remove and cool before serving. I like to melt some chocolate or make an icing to drizzle over top when cooling. Enjoy. Serving Size: 12 wedge sized scones
