2 1/2 cups flour1 heaping teaspoon baking powder1 teaspoon baking soda1 1/4 cups brown sugar ( I used splenda Brown sugar)1/4 cup vegetable oil ( I used canola)1/4 cup applesauce1 egg1 cup buttermilk2 cups rhubarb, diced 1/4 cup chopped walnuts ( I used black walnuts)
Sift flour, baking powder, and baking soda. Beat together brown sugar, oil, applesacue, egg, and buttermilk. add flour mixture and stir until flour is barely moistened. Fold in rhubaarb and nuts. Fill muffin cups 2/3 full. bake 25 minutes at 350 degree F. 24 muffins.
