Creamy Indian-Style Butter Chicken

Ingredients
1 cup Butter, salted2 cups Whipping Cream2 tbsp Curry powder2 tbsp Garam Masala spice blend0.5 tsp Cayenne Pepper3 tsp Garlic, minced1.5 cup White Onion, chopped1.5 cup Tomato Sauce (large tin)24.0 oz Boneless/Skinless Chicken Breasts (about 4 × 6oz breasts), cubed
Directions
In a medium skillet, cook chicken in about a tbsp of butter until just starting to brown. In a large skillet or pot, add half the butter and the onion and garlic. Cook until just brown, then add remaining butter, garam masala, curry powder, and cayenne (if using). Allow spices to cook for about 4-5 mins, then add whipping cream, tomato sauce, and chicken. Cover and allow to simmer for approximately 20-30 minutes, stirring occasionally. Remove from heat and allow to thicken a bit, about 10-15 mins. Serve over rice / cauliflower rice. Salt to taste. Serving Size: Makes approx 8-servings
