Ingredients
4.0 large Egg, fresh, whole, raw1.0 tbsp Pepper, black1.0 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh3.0 tsp Garlic2.0 tsp Mrs. Dash (R) Lemon Pepper Seasoning Blend9.0 tsp Mrs. Dash (R) Garlic & Herb Seasoning Blend32.0 tbsp Alber's Yellow Corn Meal16.0 tbsp Pillsbury gluten free all purpose flour mixture
Directions
Prep: Bowl one: Mix garlic powder in with g-free flour. Bowl two: Beat eggs together. Bowl three: Mix other spices with corn meal. Dip slices one at a time in each bowl as numbered. Fry in oil of your choice over med high heat until browned. Flip and fry other side. Serving Size: Makes 14-24 slices depending on size of eggplant and thickness of the slices
