Ingredients
16 oz Ground Beef (extra lean) 2.25 cup Cottage Cheese - Low Fat (Friendly Farms - Aldi) 2 tbsp Reggano Parmesan & Romano Grated Cheese (from Aldi's) 6 serving Reggano Lasagna Noodle- 2 pcs 3.50 cup Tomatoes, Crushed, Happy Harvest 28 oz can 2.50 cup Friendly Farms Italian Style Shredded Cheese 2 large Egg, fresh, whole, raw
Directions
Brown beef, drain any grease. Add tomatoes and season with Italian seasoning blend (oregano, basil, etc.) to taste.
In mixing bowl, stir eggs and Italian cheese blend into cottage cheese.
coat bottom of baking dish with 1/4 to 1/2 cup of sauce. Lay noodles on top. Spread 1/2 of cheese mixture over noodles, spread 1/3 of remaining sauce/meat mixture over cheese mixture. add another layer of noodles, spread remaining cheese mixture and then sauce/meat mixture. Add third layer of noodles and top with remaining sauce. Sprinkle with reserved cheese and parmesan/romano.
Cover with foil and bake for 1 hour or until noodles are soft and sauce/cheeses are bubbling.
