Cinnamon Applesauce WW Pancakes

Ingredients
1 cup All-purpose flour 1 1/2 cup whole wheat flour 4 tsp Baking Powder4 tbsp brown Sugar1 tsp Salt2 large eggs2 2/3 cups skim milk1 tsp pumpkin pie spice6 tbsp cinnamon applesauce
Directions
1. Combine dry ingredients first in large mixing bowl. Then add in wet ingredients and whisk together until smooth.

2. Heat griddle or frying pan, when hot spray with oil or nonstick spray.

3. Spoon in batter about 1/4 cup at a time. Pancakes come out about 4-5 inches in diameter.

4. Let cook until bubbly across the whole top and slightly dry around the edges. Flip and cook on other side until both sides are golden brown.

5. Serve with desired toppings.

Note: This is the double batch version, so it is easily halved. Nutritional info is for a single pancake.

You could vary the recipe by using splenda to cut the calories. I don't use splenda since I don't like the taste it gets when heated.

I made the double batch and then froze the leftovers for breakfast during the next week!

My husband, who is only so-so on pancakes, loves these!

    I had to play with the ingredients because I ran out of white flour. I also made the pancakes smaller and they ended up being 45 calories each but believe me they are SO filling! This was great and they turned out beautifully :) - 2/1/09

    Delicious! My 2 & 3 year old loved these, right after breakfast I jumped on the computer to save this recipe. I substituted splenda and egg beaters, but it was still awesome. I served them with sugar free syrup and apples with cinnamon, watch out IHOP!!! - 2/3/09

    These pancakes are so good, I substituted a half cup of egg beaters and my batch made 29. I had 3 with strawberries and "Vanilla Waffle Sauce". Best breakfast in a long time and my meal ended up being about 300 calories.
