Flourless Chocolate Zucchini Cake

Ingredients
8 large Eggs1/3 cup chopped Almonds, dry roasted 2 cups or 1 can Chickpeas (garbanzo beans)2 tsp Baking Powder2 tbsp Cocoa, dry powder, unsweetened2 tbsp Light Corn Syrup, honey, or sugar substitute 1/4 cup Chocolate chips2 cups grated Zucchini
Directions
Preheat to 350. Spray a 13 x 9 pan with no-stick cooking spray. Drain one can of garbanzo beans and process in a blender with 2 of the eggs (until smooth). Set aside. Grate 2 cups zucchini and chop nuts. In large bowl, mix together garbanzo beans, the rest of the eggs, the corn syrup(or honey, or sugar substitute), the cocoa until mixture is smooth. Then, add baking powder, chocolate chips, nuts, and zucchini. Mixture will be runny. Pour into pan and immediately bake. 350, 25 -30 minutes. Serving Size: Makes 24 pieces in a 13 x 9 pan

    First time to make this- it is good, but next time, I will add 1 more tablespoon of cocoa powder, and 1/4 tsp cinnamon, and 1/4 tsp salt. - 7/3/17
