Tomato Basil Mozzarella Pasta

Ingredients
16.0 oz Mozzarella Cheese, part skim milk8.0 tbsp Basil2.0 clove Garlic3.0 can Tomatoes, red, ripe, canned, whole, no salt added1.0 tbsp Extra Virgin Olive Oil2.0 serving *Barilla Whole Grain Rotini
Directions
Gently pulse tomatoes in blender until chunky. Heat oil in pot and saute chopped garlic for one minute. Add tomatoes. Finely chop fresh basil and add to sauce. Simmer for one hour and set aside to cool. Cook pasta according to instructions on box. Cut mozzarella into small cubes. Once sauce and pasta have cooled to room temp, add mozzarella and sauce to pasta and gently mix. Serving Size: Makes 8 servings
