Taco Soup

Ingredients
1 lb. ground beef1 pkg. (32 oz.) reduced-sodium beef broth1 can (15 to 16 oz.) black beans, rinsed and drained1 can (14.5 oz) diced tomatoes1 pkg. (1.25 oz) reduced sodium taco seasoning1 can (11 oz.) whole-kernel corn with sweet peppersTortilla chips, optional
Directions
1. In a large saucepan (or a soup pot), cook beef until browned. Drain off fat. Stir in broth, beans, tomatoes, and taco seasoning. Bring to a boil over high heat; reduce heat and let simmer, uncovered for 15 minutes, stirring occasionally.

2. Stir in corn, heat a few minutes more. Serve with tortilla chips if desired. Or if you'd rather, you could top it with cheese or sour cream.
Makes 6 servings, about 1.5 cup per serving. You could make it even lower calories if you use low fat ground beef; I used 80% lean, which is pretty fatty, but it is so much cheaper (I got it for 99 cents a pound).
