Cucumber and Fruit Crisps

Ingredients
3 medium cucumbers, scored with veggie peeler to look pretty, or leave the peel on1/4 cup finely chopped, toasted pecans1/4 cup reduced fat sour cream1/8 tsp. salt1 cup finely chopped apple, your fav variety1-8oz. cn. unsweetened crushed pineapple, drained
Directions
Score cucumber and slice each into 16 slices.
Mix all other ingredients in small bowl. Cover and place in fridge until chilled, about 1 hour.
Place cucmber slices on tray, if you pat dry first fruit will "stick" better.
Put about a tsp. of fruit mixture on each slice.
Makes 48 slices

    This is an excellent combination, but I made it like a regular fruit salad. I cubed the 3 cucumber, 1 apple and used cubed pineapple. I tossed all the combination together and replaced the salt with a seasoning called Spike. I upped the calories a bit because I didn't use low fat sour cream. - 9/20/08
