Summer Delight Ratatouille

Ingredients
6 cups sliced zucchini5 cups cubed eggplant10 oz pkg baby bella mushrooms, sliced2 cloves minced garlic1 large onion, chopped1/2 tsp crushed red pepper flakes1- 14 1/2 oz can Del Monte Stewed Tomatoes (Italian Recipe)1- 14 1/2 oz can Del Monte Diced Tomatoes3 tbsp olive oil1/8 tsp salt1/8 tsp black pepper
Directions
Makes about 8 servings

Add 2 tbsp olive oil into non stick skillet. Add sliced zucchini and cook on med-high heat for 15 mins, mixing often.
Add cubed eggplant and cook an additional 10 mins.
Add mushrooms, garlic, onion and red pepper flakes, along with remaining tbsp of olive oil, mixing well and cooking on med heat for 5 mins.
Add tomatoes, salt and pepper, cook on low about 10 mins or till tender but firm.

Serve as a side dish, or over rice or your favorite pasta!
