Chicken Chili Verde Enchilada

16 ounces Chicken Breast (cooked), no skin, roasted 8 oz Crystal Farms Marble Jack Cheese (a blend of Colby & Monterey Jack) 1 cup Hatch Green Chili Enchilada Sauce (by JULESDW) 3 cup, strips Green Peppers (bell peppers) 1 cup, chopped Onions, raw 8 serving Tortilla, Tumaro's Ancient Grain
Bake chicken in sauce. Bake peppers and onions, no oil.
Dice cooked chicken and peppers, combine in sauce. Add 3/4 c grated cheese and mix.
Place a scant 8th portion of mix on tortilla and roll up. Top with any mixture that couldn't fit in tortilla.
Cover and bake 20 min. or until heated through.
Serving Size: makes 8 enchiladas
