Chili-Lime Corn

Ingredients
1 tsp chipoltle chili powder1 tsp lime zest1 1/2 TBS. fresh lime juice1 tsp salt4 pieces of corn on the cob
Directions
Preheat grill. Stir together chili powder, lime zest and juice, and salt. brush over husked corn. Grill corn over medium heat until tender and lightly charred. You can change the spice amount to taste. You can also add olive oil to the mixture if desired.

    Love this recipe, and I do use a little olive oil to keep everything moist. It's also really easy to cook it under the broiler in the oven. Lots of zippy flavor, and very healthy! - 7/29/09
