Ingredients
3.0 ounces Chicken Breast (cooked), no skin, roasted0.5 cup, chopped Carrots, raw1.0 cup, chopped Kale0.25 cup Sun Dried Tomatoes1.0 cup 365 Organic Quinoa1.0 serving Cheese - Feta, Crumbled - Treasure Cave x 1/4 Cup4.0 serving Pesto, Priano ALLA GENOVESE PESTO, 2tbs (30g)
Directions
Cook quinoa in chicken broth until tender. Saute kale and carrots for a few minutes in a small amount of olive oil. Mix kale and carrots with quinoa add chopped sun-dried tomatoes and the chicken breast sliced into bite-size pieces. Stir in the feta cheese and add pesto to taste. Chill Serving Size: Makes 8 1/2 cup servings
