Karen's Minty Spinach Smoothie

Ingredients
0.5 cup (not packed) Cottage Cheese, 2% Milkfat 1 cup Spinach, fresh 0.5 cup Milk, 2%, with added nonfat milk solids, without added vit A 0.25 tsp Mint Extract (1/4 teaspoon) (by MY-CHALLENGES) 0.5 tsp Vanilla Extract 1.75 tsp Splenda
Directions
Blend all ingredients in blender until smooth. Add half cup or more of ice if desired to make it more like a shake. If you prefer, omit Splenda and use one really ripe frozen banana instead. For thicker shake consistency, add 1/4tsp xanthan gum.
