Asian Style Chicken Lettuce Wraps

1 1/2 cups cooked, cooled skinless chicken breast, shredded1 1/2 cups cooked, cooled short grain brown rice1 (8-ounce) can sliced water chestnuts, drained and minced1 (8-ounce) can shredded bamboo shoots, drained1 (14 oz) can baby corn, sliced2 tsp garlic powder1/2 tsp onion powderzest of 1/2 orangejuice of 1/2 orange1/3 cup hoisin sauce1/3 cup teriyaki sauce1 tbsp rice vinegar1 1/2 tbsp freshly grated ginger1 tsp Sriracha3 green onions, thinly slicedblack pepper, to taste1 head butter lettuce
Combine the chicken, rice, water chestnuts, bamboo shoots and baby corn in a large bowl.
In a small bowl, whisk together the garlic powder, onion powder, orange zest, orange juice, hoisin, sauce, teriyaki sauce, rice vinegar and Sriracha.
Pour dressing over the chicken mixture and fold through to mix evenly.
Fold in the green onions and season with pepper to taste.
Serve in lettuce cups
