TVP Burgers

1 tbsp ground flax seed3 tbsp water1 cup TVP3/4 cup water, boiling1/4 cup ketchup 1/2 tsp oregano1/2 tsp marjoram1/2 tsp garlic powder1 tbsp parsley flakes1/2 tsp salt1/4 cup carrots, grated 1/2 cup whole wheat bread crumbs1/2 cup vital wheat gluten 1 tbsp safflower oil
Preheat oven to 350 degrees.
Mix flax seed with 3 tablespoons of water and set aside.
In a medium sized bowl, mix the TVP with the boiling water. Mix in the ketchup, herbs and salt. Let stand for 10 minutes and then add in the carrots and flax 'egg'. Mix in the bread crumbs, wheat gluten and oil to make a firm mixture.
Scoop out a packed 1/2 cup of the mixture and form into a patty. Repeat for all 4 patties. Place on a parchment-lined baking sheet and bake for 30 minutes, flipping burgers after 15 minutes.
Serving Size: Makes 4 burgers
