Eggs In a Cloud

Ingredients
2 large Egg, fresh, whole, raw 3 tbsp Parmesan Cheese, grated Pinch salt Pinch pepper
Directions
- Separate eggs and pre-heat oven to 400 F
- In a bowl, put the whites and starting beating. When they are foamy, add the salt. Continue to bet until firm, then add the pepper and fold in the cheese.
- Make 2 mounds on a piece of parchment paper. With a spoon, make a round indentation in the middle of each mound.
- Cook at 400 F for 10 minutes.
- Take out of the oven and put a yolk in each of the mounds.
- Return to the oven and cook for 2 to 3 minutes.
