Quaker Oat Bars - Julie Style

4 tbsp. flaxseed1 cup smart-balance (non-dairy/parve)1/2 cup brown sugar1/2 cup sugar1tsp. vanilla1.5 cups whole wheat flour1 tsp. baking soda1tsp. cinnamon (1/2 tsp. salt - opt.)3 cups Quaker Oats (NOT INSTANT)1/2 cup raisinsYou can play with the ingredients and add 1/2 cup brown sugar if you'd like, or 1 cup of raisins. I am trying to cut the calories in this dessert...which is delicious! You may also substitute the 1/2 cup sugar with apple sauce. They come out moist and delicious!
Heat oven to 350
Beat Smartbalance and Sugars until creamy. Add 2 eggs and vanilla. Mix well.
In a separate dish: flour, baking soda, cinnamon and salt. Add to wet mixture. Stir in oats and raisins. Bake at 350 in a baking pan (13X9in) (or any size - depends on how thick you want them) for 35 minutes. Enjoy! You can also make cookies out of this one by dropping droplets of the mixture onto a cookie sheet. Bake at 350 for 10-12mins.
