¼ cup unseasoned rice or cider vinegar3 tsp wasabi powder2 tsp sugar2 tbsp water1 tbsp soy sauce1 lb (about 1 large) kohlrabi, unpeeled and shredded12 oz (about 1/2 medium) daikon radish, peeled and shredded1 small carrot, shredded1 large scallion, thinly sliced
Mix together vinegar, wasabi powder, sugar, salt, and soy sauce in a large bowl.
Add the vegetables, toss to coat.
Chill 1 hour before serving.

A. May. Zing!!!! I make a delicious kohlrabi slaw with identical ingredients except for the soy sauce and wasabi, and I add a little of the light, olive oil mayo, so it's more like a traditional slaw. It's very popular around my house, but when I'm in a mood for asian, I'm going for this! YUM! - 12/19/10
