1) clean and washed beans. Put beans in a pot and cover with water. Soak over night. Next morning bring to a boil and reduce to a simmer and simmer for 2 hours.
2) take about 1/3 of the beans and mash.
3) Cut the sausage into 1/2 inch pieces. Dice ham into 1/2 inch cubes. Brown the sausage and ham.
4) In a large stock pot, saute the peppers, onion and celery in oil until tender. Add garlic and saute about 1 min.
5) Add sausage, broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed and whole beans. Bring to a boil and reduce to a simmer. Cover and simmer for 2 hours.
6) remove bay leaf and stir in lime juice.
Serving Size: makes about 11- 12 oz servings
