90 Grams Chorizo thin sliced80 Grams Onions raw peeled cut in wedges3 small Sweet potato peeled and cubed800 Grams pumpkin peeled and cubed0.25 cup lentils boiled over 4.0 clove Garlic peeled and crushed2.0 serving chicken stock cubes3.0 tsp dryed ThymeDryed Chillies
Directions
Boil the lentils and chorizo until soft Pre heat the oven gas mark 8 In a roasting tin add the potatoes, Pumpkin, Onion, garlic, herbs, chillies And roast until soft (30/45minutes ) In a large pot add the roasted veg and the stock cubes Add boiling water ( cover the veg) Liquidise add the cooked lentils and chorizo Taste and season to your taste buds Serving Size: 4 servings
