Spinach Lasagne

500g frozen spinach (thawed and drained)375g reduced fat ricotta cheese375g reduced fat cottage cheese500g jar marinara spaghetti sauce3 cups water300g lasagne sheets400g cooked lentils or beans2tsp dried oregano1tsp dried basil1 clove garlic50g Parmesan cheese, gratedBlack peppersalt to taste
Mix spinach with the cheeses, herbs, garlic, lentils and pepper, taste and add salt if needed.
Dilute the marinara sauce with the water.
In a large lasagne dish, place a layer of the spinach mix, then pasta, then sauce, repeat two more times, finishing with a layer of sauce. Sprinkle with the Parmesan cheese and another sprinkle of black pepper.
Cover with foil.
Bake in a moderate oven for 75 minutes.
