Ingredients
2 cup green giant cauliflower rice 4 cup Earthbound Farm - Mixed Baby Greens 1 cup Trader Joe's Melange A Trois - bell pepper mix (by LBRANN25) 8 oz Ground beef, lean .5 cup, chopped Onions, raw Taco seasoning: 1 Tablespoon Chili Powder½ Teaspoon Garlic Powder½ Teaspoon Onion Powder1½ Teaspoons Ground Cumin1 Teaspoon Salt1 Teaspoon Pepper¼ Teaspoon Crushed Red Pepper Flakes¼ Teaspoon Dried Oregano½ Teaspoon Paprika)2 serving Guacamole - Wholly Guacamole 2 Tbsp 2 serving Don Pablos Pico de Gallo (Any pico or salsa, check for ingredients)
Directions
Saute ground beef and onions. Add taco seasoning
Saute bell pepper mix
Saute cauli rice for 5 minutes, add 2 Tbsp water, cover and steam for another 5 minutes.
Build your bowl: Mixed baby greens, topped by ground beef mixture, pepper mix, guacamole and pico de gallo. Enjoy.
