Basic Risotto Recipe (No cream or Wine)

Ingredients
2 cup White Rice, glutinous 1 large Onions, raw 2 clove Garlic 2 stalk, large (11"-12" long) Celery, raw 3 cup Chicken stock, home-prepared 3 cup (8 fl oz) Water, tap 50 grams Butter, salted 1 cup, shredded Cheddar Cheese .5 tsp Salt .5 tsp Pepper, black 2 1tsp Olive Oil
Directions
Finely dice onion, garlic and celery. Heat oil in a large oven proof pot, then add diced vegetables and saute until soft. Add rice and stir to coat in vegetables. Add stock, water and butter.
Cover pot with lid and place in a medium (180 degrees celsius) oven and cook for 30mins. Check risotto and stir before returning to the oven for a further 30mins. Once cooked, remove from the oven and add cheese, salt and pepper to taste. Stir to combine thoroughly before serving.
