Low carb zucchini parmesan fritters

Ingredients
2 cup Zucchini (Grated) (by STEFANIE822) 1 large Egg, fresh, whole, raw .25 cup Cornstarch .5 cup Parmesan Cheese, grated 2 tbsp chopped Onions, raw .25 tsp Salt .25 tsp Pepper, black
Directions
Mix all ingredients until well combined. Add 2 tbsp coconut oil to non stick fry pan and heat on medium high heat. Scoop 1/4 c. zucchini mixture into pan and flatten. Reduce heat to medium. Cook approximately 3-4 min on each side. Move to a paper towel to soak up excess fat.
