Quinoa Gluten Free Banana Waffles

Ingredients
1/2 cup Quinoa Flakes1/2 cup Quinoa Flour1/2 cup Oatmeal2 Tbsp Honey2 tsp Baking Powder1 tsp Baking Soda1/2 tsp salt2 very ripe Bananas2 Eggs (or 1/2 cup egg beaters)3 Tbsp Olive Oil1/2 c Soy Milk
Directions
Mix flour, flakes and oatmeal with dry ingredients. In separate bowl mash bananas and mix in flax meal or egg replacer and honey, add to dry ingredients. Mix in oil. Add milk and water until desired consistency for waffles. Cook in waffle iron or as pancakes on the stove. Top with fresh or frozen thawed fruit.

Makes eight fluffy squares. (My waffle iron makes two squares at a time.) Makes six or eight pancakes.
