Stuffed Green Peppers

Ingredients
5 large green peppers1 lb. lean ground beef1/2 cup chopped onion1 16 oz can chopped tomatoes1/2 cup brown basmati rice1/2 cup water1 teaspoon salt1 teaspoon Worcestershire sauce1 cup shredded Cheddar or American cheese1 5.5 oz can of V8 vegetable juice
Directions
Cut tops from green peppers, remove seeds and membranes. Chop pepper tops and add to the remaining ingredients and mix thoroughly. Fill the pepper bodies with the mixture and set in crockpot. For extra moisture pour V8 over the peppers, cover and cook for at least 5 hours on low or until desired softness.

    Changed the recipe just a bit .....cooked in oven, and it was great. I did not use the cheese to cut back on calories. Next time I will use 1/2 ground turkey and 1/2 beef. Maxie - 10/19/08
