Leek flan

Ingredients
1000 grams Leeks 200 grams Sour Cream 4 extra large Egg, fresh, whole, raw 1 tsp Salt 1 dash Pepper, black 0.2 tsp Nutmeg, ground
Directions
Prepare leeks. Cook in a lidded pan for 15-20 minutes (no need to add fat).
Once cooked, add the cream, salt, pepper and nutmeg. At this stage, the mixture should have cooled down sufficiently to allow you to break the eggs directly into the pan. Mix well.
Pour in an oiled cake tin.
Bake for 30 minutes.
