Sauted Spinach

Ingredients
1 tsp. extra virgin olive oil1 pkg baby spinach 9 oz1/4 c. sliced red onion1 tsp. diced garlic (or 1 clove)1/2 lemonsaltfresh ground pepper
Directions
Heat oil in skillet. Saute onion and garlic about 1-2 minutes. Add spinach and saute until wilted. Squeeze the juice of 1/2 lemon onto vegetables (strain with fingers to avoid seeds). Season with salt and fresh ground pepper. Eat immediately as it will cool quickly.
