Spicy Sasuage, Kale and Sweet Potato Soup

1 lb hot italian pork sausage 2 tbsp canola oil 1/2 onions, yellow 1&1/2 cubes peeled sweet potato 4 cloves garlic1 package baby bella mushrooms, sliced 1 tablespoon tomato paste 1 can diced tomatoes (with juice)8 cups low sodium chicken broth 5 oz baby kale 1/2 box orzo pasta Salt, pepper and oregano to taste
Brown sausage in pot. Remove from pot and drain. Add canola oil. Cook onions, sweet potatoes and garlic for about 5-7 minutes (add salt and pepper). Add sliced mushrooms; cook for 2-3 minutes. Add tomato paste and stir. Add diced tomatoes (with juice) and chicken stock. Bring to a boil. Add orzo. Reduce heat. Add kale and sausage. Season as needed. Simmer for 30 minutes.
