Shrimp and Sausage Skillet Paleo/Keto Meal

Ingredients
10.75 oz Shrimp, cooked 2 link (4" long x 1-1/8" dia) Smoked Sausage, pork 1 large Zucchini, baby .5 cup, strips Green Peppers (bell peppers) 1 cup Bell peppers (Green, Red, Yellow, Orange) .5 large Onions, raw 4 tsp Great Value Minced Garlic (by LIALEXA) .25 cup Chicken stock, home-prepared
Directions
Heat a large skillet over medium-high heat with some olive oil or coconut oil
Season shrimp with Old Bay Seasoning
Cook shrimp about 3-4 minutes until opaque – remove and set aside
Cook onions and bell peppers in skillet with 2 Tbsp of olive oil or coconut oil for about 2 minutes
Add sausage and zucchini to the skillet, cook another 2 minutes
Put cooked shrimp back into skillet along with the garlic, and cook everything for about 1 minute
Pour chicken stock into pan and mix through to moisten everything
Add salt, ground pepper, and red pepper flakes to taste
Remove from heat, garnish with parsley and serve hot

    I made this for dinner today, but added more chicken stock than I needed. Next time will not add any because the zucchini already has water in it, so will make sure it is cook thoroughly before adding chicken stock. Taste good too. - 1/22/18
