Bulgur Wheat and Arugula Salad

Ingredients
1 cup dry bulgur wheat1/2 cup garbanzo beans1/2 avocado3 fresh scallions1 cup cherry tomatoes3 oz of Fat Free Feta cheese10 fancy black olives1 1/2 cups fresh arugula1 Tbs olive oil2 Tbs spoons fresh lemon juice sea salt and pepper to taste optional: sprinkle of Gomazio (sesame, seaweed, sea salt mixture)
Directions
Pour 1/2 cup boiling water over dry bulgur wheat in bowl. Stir and cover, let sit for 30 minutes.

Add all other ingredients accept arugula, mix.

Add arugula before serving.
