Keto Chocolate Mini Cheesecakes

Ingredients
16 oz Cream Cheese .5 stick Butter, salted 2 large Egg, fresh, whole, raw 1 tsp Vanilla Extract 2 tbsp Cocoa, dry powder, unsweetened 24 tsp Swerve All Natural Sweetener (by JANIS-IRENE)
Directions
16 ounces Cream Cheese Softened ( I used Trader Joe’s)
¼ Cup Butter Softened ( I use Kerrygold or Kate’s)
1 teaspoon Vanilla
2 or 3 Tablespoons Cocoa
2 eggs
½ Cup Swerve Sweetener

Preheat oven till 325. Mix ingredients together till smooth. Pour into lined muffin tins. Bake for 15-20 minutes. They will crack a bit. Do not overbake.

I serve with Whipped Heavy cream

1 cup Heavy Cream
½ teaspoon Vanilla
1 Tablespoon Swerve
Wip till soft peaks
