Chinese 5-Spice Powder

4 Tb. Szechuan peppers (or you can substitute other peppercorns - I use white peppercorns)4 Tb. whole cloves4 Tb. broken cinnamon sticks4 Tb. fennel seed12 whole star anise
1. *Combine all ingredients in a blender or spice/coffee grinder and blend until fine.
2. Store in an airtight container. Keeps for about two months.
*For the most authentic and intense flavor, pan roast the whole spices in a heavy skillet over medium high heat, stirring constantly for 1-2 minutes until fragrant. Cool, then grind. Makes about 1/3 cup.
