Hazelnut Butter Cookies

500 grams Flour, white 300 grams Butter, unsalted 250 grams Hazelnuts 125 grams Granulated Sugar 2 large Egg, fresh, whole, raw 20 grams Water, tap
Process the hazelnuts into hazelnut meal using a food processor. Combine flour, butter (cut up small), hazelnut meal, and sugar until it acquires a sand-like texture. Then add the cold water and the two eggs. Combine until dough forms. Separate into 4 2"inch diameter logs. Wrap each log in plastic wrap or parchment paper and refrigerate for 3 hours or freeze for up to 3 months. When ready to bake, bake the 1/4 inch thick slices that you've laid out on parchment covered trays at 375 for 10-15'.
