Mac n Cheese

Ingredients
Barilla Plus rotini pasta, 14.5 oz boxMozzarella cheese, part skim milk, 1 oz4 oz low fat or fat free cheddar cheese1/4 cup low fat buttermilk1/4 cup chopped onions1 cup chickpeas, pureed2 tablespoons light margarine
Directions
Boil pasta according to instructions on box. in a large microwave safe bowl mix cheddar and mozzarella cheeses, buttermilk, onions and margarine. Puree chickpeas in seperate bowl and then add to cheese mixture. Microwave for 1 to 2 minutes to melt cheeses. Beat mixture thoroughly. When pasta is al dente, mix cheese mixture into pasta.

* For variation, sometimes I add green peppers, and pureed red peppers. Just be sure to roast the peppers before pureeing, otherwise they won't add as much flavor, and the kids will see the "specks"!
